Soziologie des Essens. Eine sozial- und kulturwissenschaftliche Einführung in die Ernährungsforschung. Weinheim/München: Juventa Verlag 1999.

People decide differently on what is edible and what is not, they have different notions about how food should be prepared, about table manners, about who is entitled to which food, and many other things. The resulting social and cultural set of rules adopted by a society at table is not only revealing with regard to this society’s attitude toward food but also tells a tale on society in general. Common ways of cooking, a shared table and taste bind people together and promote the sense of community. In contrast, unfamiliar ways of cooking, the denial of a place at table, and strange tastes result in separateness and the construction of social barriers. When a society changes, this set of rules may be called in question and even fall apart. If it does, the search for new eating rules becomes a central feature of the society at table. This holds particularly true for our society today. Abundance of food has not generated pleasure and enjoyment, but fear of eating and asceticism.

The book presents a comprehensive introduction to this topic offering specific topic-related explanations but also referring to more general sociological theories in order to throw light on the social conditioning of eating habits.
